Due to the fact that I mainly cook for myself, I've developed or modified various recipes to fit my taste. Some of this stuff is fairly straight forward, others not so much.
Some of these I've started to write down, so I decided I'd share them with y'all. If any of you get the urge to cook, you can try some of these. I'm probably gonna turn this into part of our "articles" section when I get enough recipes down.
Now, why am I writing this when most of you don't cook? Good question; I was just committing this stuff to notepad, and decided copy+paste wasn't that hard. And hey, maybe you'll get the urge one day.
If you have anything to add yourself though, please do. I'd love to try something new.
Upcoming Chicken Linguine, Spicy beef strips, ect.
Here they be:
Beef Vindaloo:
1 cup broth (chicken/beef)
1 lb flank steak
2 tsp coriander
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp turmeric
1/2 tsp cayenne pepper
1/2 tsp salt
2 tbsp butter
1/4 cup shallots
4 cloves garlic
2 tsp grated ginger
1 tbsp brown sugar
2 tsp vinegar
Prep:
-slice steak think, against grain
-combine coriander, cumin, cinnamon, turmeric, and cayenne pepper
Cook:
-Fry onions, salt them
-Add garlic, ginger
-Add spice mix
-Add beef
-Add brown sugar, vinegar
-Cook for ~10 min, add broth to personal preference for sauce (can add corn starch to
thicken)
-Serve over rice, with yogurt mix
Yogurt mix:
2 cups yogurt
1 cucumber
2 tomatoes
Mint
Salt
Pepper
Garlic
-Mince cucumber, tomato, add to yogurt
-Add spices to taste
Generic Chinese Spicy Chicken:
3/2 lb chicken
2 tbsp sugar
2 tsp cornstarch
1/2 cup chicken broth (can use H2O)
1/4 cup soy
2 tbsp lemon juice
1/4 tsp red pepper flakes (I add a tbsp, but I like things crying hot; 1/4th gives gentle heat)
1 onion, chopped
Garlic (to taste, more the merrier)
1/3-1/2 cup dried, unsalted peanuts
Optional:
3 Green onions, chopped
Cayenne pepper, Garlic power, salt, pepper to taste
1+ tsp Grated Ginger (more the better)
Prep:
-Cut chicken into 3/4 in cubes
-Cut onion, green onion
-Mix sugar, starch, broth ==> blend, then add soy, lemon, and pepper ==> Blend
Cooking:
-Fry onions, add salt/pepper, in olive oil + peanut oil mixture (add chili oil if possible)(sounds like a lot of oil, but just add each in equal proportion enough to cover the pan)
-Add green onions, crushed garlic, ginger
-Add chicken, salt/pepper/cayenne/garlic power to taste ==> cry till cooked
-Add mix ==> simmer for a bit
-when done, mix in peanuts
-serve w/ rice
To try:
-If you can, fry the chicken in white sherry to taste
-Try frying in red pepper pods, bell pepper, ect
Breakfast Pie:
1 onion, chopped
Salt, Pepper to taste
8 eggs
1/4 cup milk
1 cup diced ham/other cured meat
1 tbsp parsley/thyme/dill mix
1 cup shredded cheese
Optional:
Crushed Garlic, garlic powder, cayenne, cilantro, red pepper flakes to taste
-Preheat oven to broil
-Fry onions, add salt/pepper
-Drain oil, chill cooked onions till cool (don't want to cook eggs w/ hot onions)
-Whisk eggs w/ milk, salt, pepper ==> add other spices ==> add onions + cheese + meat
-Add mix to pan, cook on med heat, ~10 min; first stir to distribute stuff equally for ~2
min, then let mixture set a bit for the last 8.
-Put pan in oven, let sit for ~10 min or until top has browned and everything has been
set, and the eggs are completely cooked
-Cool, slice into wedges
Persian Food:
I think the first one can fit some of your tastes. The second one, only if you are up for a lot of work.
Upcoming: Herb Pie (aka Kuku Sabzi)
Meat paste w/ tomato soup (aka abgusht)
2 dried limes (optional, can just add lemon juice, ~2 tbsp)
2 lbs beef shank w/ bone
1 onion
2-3 red potatoes
Tomato paste (~8/16 oz, to taste)
1/2 cup white beans
1/2 cup garbanzo beans
1 tsp turmeric
2 med tomatoes
Garlic
Salt
Pepper
Cayenne pepper
Curry powder - 1 tsp
1 bay leaf
-Take everything but the potatoes and mix with ~5 cups of liquid (best results if ~2 cups chicken broth w/ 3 cups water as opposed to all water) ==> bring to boil ==> simmer on med-lo heat (partially covered). Cook for ~7 hours (longer the better, but you can do it in less; just make sure the beans are cooked).
-cook potatoes ==> bring to boil, med heat for ~30 min.
-add potatoes 2 hrs before completion
When done:
-strain mixture, separate liquid from solids, remove bones from meat.
-Mash the solid mixture, adding some of the soup to taste/better consistency ==> should be fairly mushed, w/ no solid beans
-Serve with flat bread of some sort, the liquid soup, and the mash
Vegetable and Steak Stew (aka Gorma Sabzi)
2 Parsley bunches
2 Cilantro bunches
2 green onion bunches
1 tbsp fenugreek (leaves, not seeds; def can get this at "super irvine"; in persian stores, can also ask for shanbelileh)
1 Can pinto beans
2 lbs chuck/flank/ect
2 tsp + lemon juice
Garlic
Chicken broth
3 dried limes (you can get these at super irvine as well)
1 lrg onion
Curry Powder - 2 tsp
Turmeric
Pepper Flakes
Prep:
-Clean + mince parsley/cilantro/green onions ==> Blend w/ chopped garlic
-Chop onion
-Cut steak into cubes (~1 in^3 per square).
Cooking:
-Fry onion, salt it
-After onion done ==> add crushed garlic ==> add turmeric (~1 tsp)
-Add steak, fry ==> during this time add curry powder, pepper flakes, pepper, and salt to taste
-Put steak/onion fry into lrg pot ==> add 1 can chicken broth + 2 cans water (water should be 1 in over the meat) ==> bring to boil
-Once boiling, turn to low heat/simmer, add three dried lemons (puncture lemons two times with a fork), then add salt/pepper to taste (partially cover)
-Mince a few cloves of garlic, and take that, the parsley, cilantro, and green onion, and mix it w/ 1 tbsp fenugreek
-Fry these in olive oil over med heat for 3 min ==> not too long, they become bitter
-Add the fried vegetables to the meat pot
-Drain pinto beans, then add to mixture
-Simmer for about two hours, stirring intermittently
-If not thick, boil until it has the consistency of porridge
-Once finished, add lemon juice to taste
-Serve with rice
To try:
-Use kidney beans
-Use bay leaf
