I like broiling. I like frying. I like grilling. I like braising.
I love every aspect of cooking that takes place on this earth.
Gentlemen...I desire to cook even in the depths of hell.
Gentlemen, my companions in the forum...Gentlemen, what do you desire?
Do you desire food as well? Do you desire a kitchen of good taste?
Very well...then we shall have a food thread.
Anyway, poorly worded hellsing parody aside, I thought we should have a food thread. A place to either talk about how great In N' Out's shakes are to posting recipes (from "square-packaged brainsacks of the Sea" to "Expo Burritos").
I'm going to start this with a recipe for the burritos we had at expo. Most food I make, I plan to have it keep for a week in variable conditions, and these burritos are great hand-held eats on the go.
Ingredients:
Cooking
1.) Heat up a frying pan, ideally 12 inches or greater diameter, on high heat. Then cover the surface of the pan with your preferred oil (I suggest olive oil, but you can use canola, butter, or just pam spray).
2.) Lower heat to medium-high, and add onions. Stir about every minute or so until they are soft and translucent. Try to avoid browning them.
3.) Add in garlic, salt, pepper, and cayenne/hot sauce at this time, stir constantly for one minute.
4.) Add in ground beef, break apart until in pieces, and fry until browned.
5.) Add in beans, fry for about 5 minutes
6.) Add in cheese, stir until it's evenly distributed and melted
7.) Take off heat.
8.) Warm up tortilla shells in some manner, I prefer to use the open flame of the stove top with flipping them constantly, but a quick stint in the oven or zap in the microwave (about 15 seconds) will be OK as well.
9.)Wrap that shit up.
10.) Eat it.
Optional rice. Added separately:
1.) Put everything into a medium sauce pan and stir vigorously until mixed. Taste it, see that you aren't gagging. Should be on the saltier side if anything (not THAT salty, but you can taste it).
2.) Boil it on high until most of the water has boiled off. You don't want to fry the rice, but there should be very little water left.
3.) Lower to the lowest heat
4.) Cover it, but leave a small opening somewhere that steam can get out. If you have a cover that lets steam out in some way, that's great. There just has to be a way for steam to escape.
5.) Let steam for about four minutes, then taste the rice and make sure that it's not hard.
6.) When it's done, remove from heat, and add to burrito.

- 1 cup of shredded cheddar and jack cheese
- 2 tsp cayenne pepper OR 1 tbsp Hot sauce (tabasco to tapatio, whatever)
- Salt and pepper to taste (start with 2 tsp of each)
- 6-12 tortillas, depending how fat you want your burrito.

- 2 tsp Paprika
- 1 Bay leaf
- 2 tsp Cayenne pepper
- 2 tsp Garlic powder
- 1 tbsp Salt
- 2 tspPepper
- 2 cups Chicken broth
- 1 cup rice
- 2 tbsp oil
